- 3-4 cups chopped leafy vegetables (spinach, bitter leaf, or pumpkin leaves)

Start by preparing the egusi: dry the melon seeds under the sun or roast them lightly to enhance flavor, then grind them into a fine powder using a blender or grinder.

Add the chopped onions to the pot and sauté until translucent and fragrant.
